Question Planning November Rush

My sorority is brand new and brimming with energy! We are planning our first Rush for mid-November. Here is how things will go:
1. "Strawberry Bash" is a festive get-to-know-you social with icebreakers and lots of food.
2. An off-campus activity like bowling or ice skating.
3. A formal dessert social where we will extend invitations.

I'm wondering how much time should be between these events. How much is too much? Would it be a really bad thing to extend beyond the Thanksgiving break?

Also, we only have seven members, so I'm wondering how to approach PNMs in this sort of setting. We aren't in competition with other sororities (we're community-based, not school affiliated), so I'm not worried about the impression the lack of numbers will make. I'm just looking for the most effective way of meeting and getting to know potential sisters.
